a click: Rainy Day Grilled Cheese with Pesto


It's raining in San Diego this weekend. I was lying in bed this morning in that half awake, half asleep state when sometime around 7am the curtain blew in the breeze that filled my already cold bedroom. Starbuck was lying in the crook of my arm. I went to move to close the window but she put her little paw on my face as if to say, "No, stay." So I stayed. And she snuggled closer and with a deep breath, closed her eyes again. 

I could hear the rain hitting my car parked just outside my bedroom. Dang! I thought. I should have brought in the rest of the odds and ends that the floor repairmen had left outside in my patio when they were refinishing my floors this week. Oh well. It's just stuff. Right now, I'm home on a Saturday morning looking at the day ahead of me and realizing that it's the first day in a long time that I could, if I wanted, stay in my room all day cuddled with Starbuck watching Netflix and drinking hot tea. I thought of all the things I should be doing: laundry, unpacking the things that I had packed up in preparation for the floor repairs this week, cleaning, blogging, working on my website. 

The rain came down a little harder just then and I imagined it telling me, "Nah, why don't you just relax today?"


Rainy Day Grilled Cheese with Pesto

I've been making a variation of grilled cheese since I was a child. It's the perfect comfort food. Ooey. Gooey. Crunchy. Salty. Warm. Hits all my favorite marks. The grilled cheese sandwich in the photo above I made, styled and shot for a wire story in the newspaper back in January. It's always been one of my favorite grilled cheese sandwich combos: pesto, sourdough, American cheese. 

And it couldn't be easier: 

Simply butter your favorite bread on both sides, place bread on a hot griddle or cast iron skillet and toast on both sides. Remove bread, spread your favorite pesto on one slice, lay a slice of provolone cheese down and top with a slice or two of tomato. Next add a slice of American cheese. Spread a little more pesto on your second piece of toast and place ontop. Carefully lay the sandwich on the hot griddle or cast iron pan and grill for 3-4 minutes. Flip then grill for another 3-4 minutes or until cheese is melted to taste. 

Done. Rainy day comfort food perfection.

  4. Love this! I've made this same grilled cheese sandwich but not with American cheese and that's the perfect excuse to make it again and today is a little rainy :) I love Mac and Cheese on a rainy day! Hmm, maybe this recipe but mac and cheese...or mac and cheese in this grilled cheese recipe? Oh me oh my!
